I eat over a dozen eggs in an average week. This is admittedly an absurd amount of eggs. But they’re just so easy! And versatile! What else can you eat for breakfast, lunch, and dinner, in cookies and faux-gluten-free-“breads”, by themselves or thrown into all sorts of concoctions? Plus they’re protein powerhouses and low calorie snacks. I mean … there’s no reason not to eat eggs. But here are some more reasons TO eat eggs, and how to choose the best:
